This pasta factory, founded in 1872 and taken over in 1934 by the Defilippis family, offers fresh and dry pasta which is made by them, without preservatives. The range of products on offer is vast, including ravioli like pasta filled with fondue and truffles, potato dumplings, lasagna and dry pasta in many colours and shapes which are extremely popular with visitors. Don't miss the 'agnolotti del plin' typical of Roero, so called because the pasta, which is extremely thin, is pinched. The 'plin' separates and seals the agnolotti and gives it its characteristic shape. The filling is a base of roast veal and pork, salted pork meat, spinach and cheese, and there is also an excellent version with fondue and truffles. They also sell inviting ready made food such as omelettes, savoury flans and stuffed vegetables.
